1 Minute Keto Success Roasted Red Peppers
INGREDIENTS:
- 8 Large Red Peppers
- 1 Tbs Apple Cider Vinegar
- 2 Tbs Olive Oil
- 1 Tsp Pink Himalayan Salt
- 6 Cloves Fresh Garlic sliced thin
INSTRUCTIONS:
- Turn broiler on low and place red peppers on a large metal tray
- Put in broiler for 2-3 minutes on each side as you finish all 3 sides of pepper
- Remove from broiler and let cool 5 minutes
- Using caution peel the skin off of the flesh of the pepper and remove stem and some seeds
- Using a cutting board slice peppers into 1 inch long slices
- Preheat oven to 250
- Line parchment paper on large metal tray about 12 x 18 inches
- Place sliced peppers on the tray and set aside
- Mix together the sliced garlic, vinegar, olive oil and salt
- Drizzle evenly over peppers
- Put tray in center of oven for 20 minutes and turn over and again for another 20 minutes
- Continue to watch until begins to dry
- Serve as appetizer or side dish
