1 Minute Keto Success Tuna Melt On A Log
INGREDIENTS:
- 3 Medium zucchini
- 2 Garlic cloves minced
- 15 oz Cans tuna 3 cans of 5 oz each (or salmon)
- 2 Tbs Primal Kitchen Mayonnaise
- 2 Tsp celery salt
- Black pepper to taste
- 6 Oz shredded Mozzarella cheese
- 2 Oz Parmesan cheese
- 2 Oz shredded Cheddar cheese
- 2 Tbs butter
- 1/4 cup fresh parsley
- 1 pint cherry tomatoes
INSTRUCTIONS:
- Preheat oven to 350
- Cut zucchini in half lengthwise
- Remove all seeds carefully not to break the zucchini using a small spoon or melon scooper
- Grease oven safe pan with butter
- Place zucchini halves into the pan open side up
- Bake for 20 minutes
- In a medium sized bowl add tuna or salmon, celery salt, black pepper, cheddar cheese, garlic and mayo & mix well
- Remove zucchini from oven and spoon tuna or salmon mix into the logs
- Sprinkle mozzarella cheese over each log
- Bake in oven 15 minutes or until golden
- Remove from oven and sprinkle parmesan cheese over
- Garnish with parsley
- Serve with cherry tomatoes on the side
